Macaroon cookie made with almond flour and egg whites. We use Lazzaroni brand, which are gluten free.

Commonly known as White Sauce, is a made from butter, flour, and milk. It is gently cooked until thickened. We follow the Italian tradition of seasoning with salt and ground Nutmeg.

Crème Anglaise
A light pouring custard made with a mix of egg yolks, sugar, and hot milk. Flavoured with vanilla bean.

Italian version of bacon, made with pork belly, salt cured and spiced with black pepper and herbs. 

A Japanese style bread crumb. It is made from bread without crusts, coarsely ground, into large airy flakes.

Parm Crumbs
Equal parts caramelized Pecorino and Parmesan cheese, mixed with toasted Panko and pulsed fine in the Robot Coupe.

A hard, granular Cow's milk cheese often referred to as Parmesan in English. Parmigiano-Reggiano is DOP/PDO. 

Pickled Chilis
Italian finger chilis, sliced and quick pickled in a brine with salt, sugar, sliced garlic, and covered in vinegar. 

Pecorino Romano
A hard, salty Italian cheese, often used for grating, made out of sheep's milk. There are four main versions of Percorino, each with DOP/POD status from their varying regions. Romano was traditionally produced in Lazio near Rome. The Italian word pecora means sheep. 

Potato Roll
A bread roll with mashed potatoes in the dough. The potato starch makes the bread softer and stronger. Perfect for big juicy burgers.

Protected geographical indication - A step lower than DOP/PDO, PGI allows for products to be raised and grown in broader geographical regions, and instead confers the importance of where it was made. 

A dry-cured ham that is usually thinly sliced and served uncooked.

An American processed cheese from St Louis MO. It is a blend of Provolone, Swiss, and Cheddar cheeses. 

Small steel cup used to carry condiments. Makes an acceptable shot glass in a pinch.

Speedy Romeo napkins are repurposed shop towels, often seen in auto mechanics. 

Traditionally made with the whey leftover from cheesemaking, it is an acid separated cheese. Our ricotta is made with whole milk. The milk is heated to just under a boil and lemon juice is added to curdle it. The milk is brought back to a boil to separate the curds from the whey, which are then strained off and cooled.

A professional grade food processor.

A nut and red pepper-based sauce native to Spain. Ours is made with hazelnuts, ancho chilies, roasted red peppers, paprika, and tomato concentrate.

Salsa Verde
An Italian dipping sauce, made with parsley, olive oil, ground bread, anchovies, garlic, and lemon. 

Fermented and air dried cured pork sausage.

San Marzano
A variety of Plum tomato. When grown in the Valle de Sarno, in Naples,  they can be classified as Pomodoro S. Marzano dell'Agro Sarnese-Nocerino and be labeled DOP. We use DOP tomatoes for our pizza sauce.

Another name for Green Onions, or Spring Onions

A japanese culinary herb in the Mint family. There are green and red varieties.

Typically a coarser grind sausage, with larger pieces of fat giving it a more marbled look. Sopressata come in different styles, sweet is seasoned with garlic, and hot with chili.

Speck from Alto Adige is a cured and smoked prosciutto. PGI designation allows pork from outside Alto Adige to be imported, and the product itself regulated by the rules of the region.

Speedy Sauce
Spicy Mushroom Aioli made using pickled chilis, roasted mushrooms, and dijon. Contains raw eggs.

Taylor Ham
Ham or Pork roll is a cured, smoked and pre-cooked pork product with a smooth consistency. Sliced like bologna, a notch is cut in the circle before it is grilled to prevent it from curling. It is standard offering in a deli breakfast sandwich in New Jersey.

Toasted Garlic
Garlic cloves are sliced thin on the mandolin and fried until golden and crispy. Oil is saved and used to finish the crust on the White Album pizza.

Tomato Concentrate
Shallow trays of pureed San Marzano tomatoes and salt are roasted in the oven to reduce by half.

Two Cheese
Equal parts grated Parmesan and Pecorino used to top pizzas.  "Yo Son, Gimme a ramekin of 2 cheese!"
